I am using my Skywatcher ST80 with a Herschel wedge and Lhires III on Saturday. The weather forecast predicts the temperature will peak on that day. As the instruments get hot is it still safe to observe?

Yes. The forecast peak is a peak of air temperature in the shade. That has little to do with the temperature your equipment will reach.
